Vegan "Alfredo" Sauce

Ingredients:

  • Unsalted Cashews

  • Nutritional Yeast

  • Garlic

  • Water or Vegetable Broth

  • Salt

  • Pepper

  • Onions (white)

  • Lemon

  • Rosemary

  • Oil (Olive Oil was used but vegetable works great too!)


Prep:

  • Put cashews (1 cup) in a bowl or mug and soak overnight, covered in the refrigerator

  • mince 2 large cloves of garlic

  • Dice 1/2 cup of white onions

  • Mince 1/4 teaspoon of Rosemary

  • Juice lemon for a tablespoon of lemon juice

Recipe:

  • In a blender:

  1. Add drained cashews

  2. Add diced rosemary and garlic

  3. Add lemon juice, onions, and minced rosemary

  4. 3/4 cup of water (or vegetable broth) *vegetable broth was used in this recipe*

  5. Add black pepper and 2 tablespoons of nutritional yeast

  6. Last but not least a generous helping of salt (approx. 1 teaspoon of salt)

  7. Blend until creamy

Add to heat when ready to use. Heat until hot.
