Ingredients:
Potatoes
Flour
Pureed Pumpkin
Salt
Egg
Brie Cheese
Sage
Garlic
Salt
Greek Yogurt
Prep:
Mash the potatoes (recipe in our Garlic, Cheese Mashed Potatoes post)
No need to add cheddar cheese into the mashed potatoes
Puree pumpkin (if not using canned)
Mix half mashed potatoes and half pureed pumpkin
Make the dough:
In a bowl whisk two eggs, 1/3 cup of water, and a pinch of salt
Add 2 cups of flour (use mixing spoon for better results)
Knead dough until firm and well mixed
I let the dough sit for about 24 hours, but wait at least an hour
Dice brie
Recipe:
Roll out the dough. Cut out circles (a coffee mug was used in this case and then rolled out more)
Fill the circular-cut dough with potato, pumpkin, and brie
Create a dumpling and pinch with a fork
Boil pierogi for about 3 minutes
Fry until brown
Fry with diced sage, garlic, and salt
Serve with greek yogurt and fresh sage
