Ingredients:
Tortilla (corn or flour chef's choice)
Mashed Potatoes
Pureed Pumpkin
Salt
Brie Cheese
Thyme
Garlic
Olive Oil
Greek Yogurt
Prep:
Mash the potatoes (recipe in our Garlic, Cheese Mashed Potatoes post)
No need to add cheddar cheese into the mashed potatoes
Puree pumpkin (if not using canned)
Mix half mashed potatoes and half pureed pumpkin
Add olive oil and salt to the frying pan
Dice brie
Chop thyme
Recipe:
On the tortilla spread garlic on the side facing up
Spread pureed pumpkin and mashed potatoes on the side of the tortilla with the garlic
Add diced brie to one side of tortilla with pumpkin, mashed potatoes, and garlic
Sprinkle thyme in right before frying
Fry until brown
